If you follow me on Instagram, you might have seen that I’m in the middle of doing a detox. It’s been amazing and I’ve never felt better. I have so much energy and my body feels so light. I also feel more focused and accomplished, getting more things done around here. It’s been great so far and I’m only 2 weeks in!
I’ve been sharing pictures of the clean eating recipes I’ve tried along the way and some of you have been asking for the recipes! The program I’m doing comes with meal plans, recipes and shopping lists on top of the products and encourages clean eating. It’s not an incredibly hard detox because it’s mostly about encouraging a healthy lifestyle, not just “drop 20 pounds this week!” kind of stuff. I’ve been following the meal plans and find myself full and satisfied. It’s been fun to experiment with these recipes! I thought I would do a round up every once in a while to share some healthy, detox-friendly, clean eating recipes with you guys!
Clean Eating Recipes!
Don’t they all look so good!? Really, they’ve been so good. One of the most awesome parts about doing this detox is that my husband and kids have been eating all these healthy things right along with me! They haven’t cut out dairy and gluten like I have, but they’re eating the salads, veggies and soups too. We eat *mostly* healthy in our house, I’m better at keeping my kids healthy than myself most of the time! We don’t buy candy or pre-made snacks. Their snacks are fruits, veggies, brown rice cakes with peanut butter and honey, things like that. There is an occasional chocolate bread for them because, well, we live in France. It’s hard to escape chocolate and bread especially when they’re together!
Chili rubbed salmon
I have been making salmon like this for a few years now and it’s so good. It’s as simple as rubbing some chili powder, a pinch of salt and pepper onto the salmon and throwing it into a hot pan with a little EVOO. A couple minutes on each side and you’re done! The salad is mixed greens tossed with a lemon vinaigrette. Here is that recipe:
- 1/4 cup EVOO
- 1/4 cup fresh lemon (or lime) juice
- 2 Tbsp chopped cilantro
- 1/2 chili powder
- pinch of salt and pepper
Combine ingredients and pour on your salad! I added white beans, sautéed red peppers and a little avocado on the side for a healthy fat. Everyone chowed this dinner down, it was a hit!
Grilled chicken and veggies
For this one I let the chicken tenders sit in a marinade during the day, which is one of my favorite things to do. In fact, I have some chicken sitting in a lime-garlic marinade right now for dinner tonight! I love it because you do the work in the morning, which isn’t much work at all, and when you’re ready for dinner, you just throw it on the grill, in the pan or in the oven! It also helps make the chicken so much more flavorful.
Here’s the recipe for the marinade:
- 5 tbsp sweet paprika
- 1 tsp chili powder (cayenne if you’re brave!)
- 1/2 tsp sea salt
- 1 tsp black pepper
- 3 tbsp EVOO
- 2 cloves of garlic
- 2 tbsp tomato paste
- juice from one lemon or lime
Mix all together and let the tenders sit in the marinade all day. Then throw them on the grill or in the pan for a couple minutes until they’re cooked through and you’re done. After I had cooked the chicken tenders, I just added a little olive oil in the pan and cooked the veggies in the same pan so they had some flavoring from the chicken as well. Served with some whole brown rice, it was really good! It was a tad spicy for my kids, but they ate it anyway!
Now, this isn’t anything mind blowing, this was me unprepared. One of the first rules in making a detox successful is to be prepared! And sadly, I was not. The first day of the detox went great throughout the day, but I hadn’t been grocery shopping yet and stores are closed all day Sundays and on this particular Monday they were closed as well. Luckily we had some organic tomato soup in the pantry but I knew it wouldn’t keep me full without the bread I usually eat it with. So I added some quinoa into the soup and a quarter of a avocado on top. Yum! It filled me up and I was able to be successful on the first day!
Herb crusted chicken
Every time I make this chicken it gets rave reviews. I shared the recipe back in July the first time I did the detox. This time I had a whole chicken that I needed to cook and we do not have a grill here. So I put a little EVOO on the chicken and added the rub all over the chicken. Then I added some lemon slices and onion under the chicken for more flavor while cooking. It turned out really nice!
I have been working hard lately, even before my detox, to fill the majority of my plate, and my kids’, with veggies/greens. Somewhere along the we’ve gotten the idea that we need a lot of meat and a lot of a white starch and then a little corner of veggies. So recently I’ve been flippin’ the script with my kids and myself. A huge portion of veggies, then a ‘side’ of meat and a grain. We’ve switched to brown rice and I rarely do mashed potatoes even though it’s one of my son’s favorites. Much to my pleasant surprise, they haven’t said a word! Not a peep about too many veggies or anything. They just eat it. It could be because I’ve been known to take away dinner if there is complaining after I’ve prepared something and they *might* have gotten the picture. “I’m hungry and want to eat. Don’t complain about what’s in front of you!”
Turkey no-bean chili with sweet potatoes
It’s hard to get a decent picture of chili, but you guys, this stuff was fantastic. I find myself thinking about when I can make it again! The only problem is that I can’t find ground turkey meat here in France so I have cut up the turkey into really small pieces. That took a while but besides that, it’s super simple and so, so good. My husband, who has said in the past he wouldn’t touch turkey meat, gobbled this up – twice! You can find the recipe here on SkinnyTaste.com.
Lentil Harvest Skillet
Another winner!! Who says that eating healthy can’t be absolutely delicious? A part of the reason I love this detox is because after the first couple days which are difficult, your taste buds start to change. You don’t really crave the junk anymore, you want good, yummy, healthy, filling meals like this one. I was literally craving this the other day, it was so good! That’s all the recipes I have for this week! I have added another black bean, lentil tomato, pepper salad that I ate twice yesterday because, YUM. And like I mentioned right now I have some chicken marinating in a lime, garlic sauce for tonight. Clean eating isn’t just good for you, it’s fun and delicious!
