Herb Crusted Grilled Chicken

I am on a health kick. I recently did a cleanse, which I will write about soon, that has helped me reevaluate my eating habits and want to make some serious changes in my life. Not the kind that just last as long as the cleanse. But the kind that are lifetime changes. And my body is thanking me for it!

During the cleanse, as you can imagine, there are eating restrictions. You can eat relatively normal but without certain food groups. The only problem is that I like food. I want to eat. I enjoy baked goods. I like flavors. Well, if I was going to be successful during this cleanse, then I needed to be creative in the kitchen. My food couldn’t lack flavor for the sake of healthy. Kinda like brown rice tortillas before they become chips…

Today I am going to share my recipe for Herb Crusted Grilled Chicken! Ever time I have made this grilled chicken, which was quite a few times, it got raves reviews. People wanted the recipe and requested I make it again. It was a hit! Not to mention is so perfect for summer. You just slap the herbs on and throw it on the grill! No heating up ovens or sweating in the kitchen! So I thought it was only natural to share it here with you.

Oh man my mouth is watering right now! So crispy and flavorful and yummy. Here’s how to whip up this grilled chicken dish.

Mix all the spices together in a small bowl and slap it on the chicken. Have the grill master of the house throw them on the grill for about 30 minutes or until brown & crispy. Remove & serve! I have served with brown rice and veggies or a whole sweet potato and veggies. The options are endless!

This is perfect for your next summer BBQ because unless you have a Vegetarian or Vegan in the house, it will satisfy everyone. It makes quite a bit of spice so pack on the chicken! I usually use 4 packets of the organic chicken legs from Costco. To add more flavor, throw the chicken in a big Ziploc bag with the spices and a tad bit of olive oil or avocado oil and let it sit in the fridge all day or even over night.
